Rub bruschetta with a clove of garlic or crush a clove with the blade of a knife and spread it on a piece of crusty, toasted bread. Add chopped raw tomatoes, and drizzle with olive oil and good salt. Add chopped parsley if you’re worried about your breath or any fresh herb of your choice.
Salsa
Chop fresh tomatoes and green bell peppers, add crushed garlic, chopped onions and coriander. Drizzle with olive oil. Serve with pretty much anything.
Salad dressing
Add crushed raw garlic to olive oil, freshly squeezed lemon juice and chopped parsley. The allicin in garlic is apparently more or less destroyed when vinegar is added, so avoid vinegar.
Guacamole
We’re entering avo season so here’s another way of getting your dose of fresh raw garlic. You need ripe avocados; lemon juice; chopped fresh coriander (dhania); and chopped chili, onion and tomato.
Mashed potatoes
Garlic, butter and potatoes love each other. Mash potatoes with butter and milk. Once the mash has cooled for a few minutes, add some crushed garlic and chopped, fresh parsley.
